Jeronimo grows espadín on the steep hills of Unión Zapata and lets it mature for 10 years for a richer, fuller flavor. Hand-selected piñas, volcanic-rock oven roasting, tahona milling, wild fermentation, double copper distillation.

Pinchudo is built with their third-generation maestro mezcalero, Jeronimo, and a fair-share mindset. They reinvest directly into the palenque and funded bottling and labeling machinery to support his autonomy and create local work.
