Andersen - Stevns 2023 - Cherry wine

Andersen Winery Stevns 2023 (10% ABV · Doux)

A traditional-method sparkling cherry wine produced from hand-sorted Danish Stevnsbær cherries — a variety with an extended ripening period in the Nordic climate, where cool nights and long bright days develop pronounced aromatic intensity and a distinctive acid profile. The cherries are crushed and fermented at low temperature on their skins to extract maximum flavour and colour, then the cherry wine is blended with Andersen's apple wine to build the right balance of aroma and acidity before a second fermentation in bottle. Aged a minimum of nine months before disgorgement, with dosage added to finish as a Doux — a genuine sparkling dessert wine.

Tasting notes: Deep cherry colour with an expressive, fruit-forward nose. The palate delivers concentrated cherry character, balanced by the natural acidity from the Stevnsbær and the structural backbone of the apple wine component. Sweet but not cloying — the dosage level is calibrated to complement dessert pairings rather than overwhelm them. Serve cold alongside chocolate desserts, confectionery, mature cheese, or as a standalone after-dinner pour.
