After fermentation in steel tanks, the wine rests on its lees for several months, allowing the inactive yeast to enhance complexity and mouthfeel. Using the méthode traditionelle, it matures in the bottle for at least six months before disgorgement, resulting in a crisp, refined sparkling wine with remarkable character.
