🪓 About the product

Tobalá (Agave potatorum) grows semi-wild and slow across the rugged hills of Sola de Vega, taking up to thirteen years to mature. Engracia harvests only mature capón plants, allowing the concentrated sugars to peak. Wet-roasted over volcanic rock to minimize smoke, the piñas are hand-mashed with mallet and canoe, fermented in ancient sabino trunks, and twice distilled in copper—yielding a clean, elegant mineral expression of the Sierra Sur de Oaxaca.

🌿 Tasting notes

NOSE: Lime peel and crisp lemongrass, with strawberry, mint, and distant notes of petrichor—rain on warm earth.

PALATE: Crisp yuzu, pine resins, and green botanicals over a clean, mineral base of wet stone.

FINISH: Long, warm, and elegant, keeping its fresh edge and a bright, yuzu driven minerality.

PROFILE: A lovely, lifted agave spirit of bright, fresh clarity. Sip mindfully, neat.

👩‍🌾 About the producer

Engracia Altamirano directs her family's fourth-generation palenque in Sola de Vega, standing as one of the few remaining independent female distillers in the region. Rejecting contemporary trends, she works strictly to the gusto histórico—the traditional taste profile honored by her community. Her output remains deliberately small, prioritizing ancestral methods and protecting her local ecosystem by planting hundreds of wild agave pups each year. Choosing her products directly supports a single woman producer, preserving the category of destilados tradicionales.
