Engracia’s 25cl Tobalá offers an intimate taste of one of Oaxaca’s rarest wild agaves. Because this cliff-dwelling plant resists cultivation and yields very little liquid, production remains limited to protect the local ecosystem. Wet-roasted over volcanic rock to minimize smoke, the piñas are hand-mashed, fermented in ancient sabino wood, and twice distilled in copper—serving as a compact, pristine representative spirit of her community’s ancestral traditions.

Engracia Altamirano directs her family's fourth-generation palenque in Sola de Vega, standing as one of the few remaining independent female distillers in the region. Rejecting contemporary trends, she works strictly to the gusto histórico—the traditional taste profile honored by her community. Her output remains deliberately small, protecting her local ecosystem by planting hundreds of wild agave pups each year. This 25cl format offers an accessible gateway to her craft.
