While researching the hillsides of El Calvario for her master’s thesis, Amairany uncovered rare Zacatoro and Papalote hybrids with an enigmatic botanical identity—a mystery honored by the inverted ¿ on this label. This inaugural single-batch ensamble is her first distillation. Under fourth-generation Maestro José Toribio, the agaves were wet-roasted as per local tradition, hand-mashed, and double-distilled in Filipino clay pots, bridging centuries of ancestral heritage with a young scholar's calling.

Tasting notes 👃

NOSE: Bright roasted agave and rustic wet hay, layered with raw honey, ripe stone fruits, and caramelized green sweetness.

PALATE: Viscous and deeply layered; toasted hazelnut and tree bark yield to aromatic copal resin over a heavy clay and mineral foundation.

FINISH: Long and persistent, leaving an elegant impression of sweet maguey fibers and wet stone.

PROFILE: A clean, earth-forward, mineral-driven spirit of exceptional clarity. Best sipped mindfully, and neat from a traditional clay copita or glass veladora.

About Artesanal 🏭

Amairany Carrasco Lopez came to distilling through academic study and the direct mentoring of Jeiry Toribio. Having visited El Calvario countless times for her fieldwork research, she stepped into the palenque to learn and assist with traditional clay-pot distillation under fourth-generation Maestro José Toribio. Today, Amairany joins a new generation of young women carrying this ancestral craft forward on their own terms. Her inaugural single-batch release marks the beginning of her career—supporting it carries these traditions forward.
