Maison de Cuivre (The Copper House)
Reservoir's flagship wine-finished bourbon — a 100% corn bourbon with a 1% rye component, finished for 18 months in a Burgundy Grand Cru cask. A collaboration with Michael Shaps of Wineworks in Charlottesville, Virginia, where Reservoir's aged whiskies were paired against Wineworks' wines to find the ideal cask match. The result: a finish in a cask that previously held Wineworks' Meritage (a Cab Franc-led blend), which layers juicy red fruit character over the bourbon's velvety toffee, tobacco and oak foundation. Blended from 2016 and 2020 Barrel Mill 10-gallon casks of corn bourbon with a small 2020 53-gallon rye barrel — a rare recipe within the Reservoir house. Available for a limited time only.
Tasting notes: Vanilla and apple peel on the nose, with black tea spice, nutmeg and a touch of raspberry jam. The palate opens with luscious vanilla custard, stone fruit and baking spice, with an unexpected herbal maté note. The finish delivers a pop of cinnamon, black pepper, leather and tobacco, closing on a lingering Red Delicious apple character.
As with the rest of the Reservoir range, grains are Virginia-grown from within 45 miles of the distillery, matured in small barrels with the house signature alligator char, and produced via open-top fermentation of up to 11 days followed by slow pot-still double distillation.
