A traditional-method sparkling wine produced from Danish Belle de Boskoop apples and Samyn elderflowers. Cold-fermented in stainless steel, followed by a secondary fermentation in bottle and a minimum of 12 months ageing on the lees before disgorgement. The extended lees contact delivers pronounced autolytic character — the bready, biscuit-like depth associated with serious traditional-method production — which frames the fruity apple base and the floral elderflower lift. The result is a floral, structured and elegant sparkling wine, with aromatic cues that recall Sauvignon Blanc and Gewürztraminer alongside the signature elderflower note. An exquisite aperitif pour, and a confident pairing with fish, shellfish and cheese.
