About the product 🥃
Stauning R.Y.E. is the distillery’s signature malt whisky and the first one it sent to market. It’s made from 100% locally grown, floor-malted Danish rye and barley, double distilled in small copper pot stills heated over open fire, then matured for 3-4 years in new American oak casks. It’s unfiltered, so a little sediment may appear, and it’s made entirely by hand at the distillery from pure local ingredients. 48% vol, 70cl. It has won international medals including SIP Double Gold, IWSC Gold, Ascot Double Platinum and SFWSC Gold.
Tasting notes 👃
Freshly baked rye bread on the nose. The palate brings gentle dried fruit and ripe cherry, balanced by vanilla and citrus peel. The finish is peppery and spicy, ending in a sweet note of exotic fruit. Soft and full-bodied with a distinct, robust character, shaped by more than 2,000 years of rye growing on Denmark’s west coast. Notes of chocolate, caramel and toasted nuts come from the open-fire distillation.
About Stauning 🐾
Stauning is a Danish distillery in Skjern, on Denmark’s west coast, and it malts all of its grain on the distillery floor. The open flame reaches up to 650°C, which makes solids in the liquid stick to the copper and brown, the same Maillard reaction that browns a steak. That is where the deep, toasty flavours come from. Noma, the Copenhagen restaurant, chose Stauning Rye as the base for its Noma Projects Whisky Vinegar, which makes a good talking point for buyers.
