Stauning R.Y.E. PX | Sherry Oak is a deeper, more nuanced take on the distillery’s signature rye whisky, with more fruit, more body and a rounder profile. It starts the way Stauning always does: local rye and barley from Denmark’s west coast, 100% floor-malted and kiln-dried at the distillery, then double distilled in 24 small copper pot stills heated over open fire. It matures first in new American oak, which gives structure and body, then gets a long finish in Pedro Ximénez sherry casks. It’s a new permanent addition to Stauning’s core range, bottled at the distillery without added colour and not chill-filtered. 46% vol, 70cl. The mash bill varies slightly from batch to batch but is always rye-dominated.

Tasting notes 👃
Warm spices and dark dried fruit on the nose. The palate brings caramelised fig, ripe plum and toasted oak, with a velvety sweetness balanced by the rye’s spicy character. Full-bodied and balanced, it finishes long, fruity and gently warming. The PX casks add dark fruit and a soft sweetness without hiding the rye.

About Stauning 🐾
Stauning is a Danish distillery in Skjern, on Denmark’s west coast, where rye has been grown for more than 2,000 years. It malts its own grain on the distillery floor, and the grain for this whisky is grown within a short bike ride of the stills. The distillery suggests a Danish PX Manhattan as a serve: 5 cl R.Y.E. PX, 2 cl sweet vermouth and 2 dashes of bitters, stirred with ice, strained into a chilled coupe and garnished with a maraschino cherry.
