This gin was born on the windswept coast of Cardigan Bay, distilled in copper stills named Meredith and Afanc after figures from Welsh mythology. The Master award-winning spirit gained its distinctive character by resting in Palo Cortado sherry casks - among the most intriguing and rarest expressions in the sherry world.
The team at In The Welsh Wind doesn't follow convention. Their distillery sits in a converted pub (the former Gogerddan Arms) on the A487 coast road, where they've created a space for experimentation and craft. This gin represents their willingness to cross traditional boundaries, bringing Welsh distilling expertise together with Spanish wine heritage.
What It Tastes Like đŹď¸
The Palo Cortado casks transform the gin by contributing toasted almond notes, dried stone fruit flavors, and warming wood spices. These elements integrate with the original gin's botanical profile to create something distinctive.
When you taste it, you'll notice how the juniper foundation supports rather than competes with the barrel-aged qualities. In The Welsh Wind began with a journey - a 1,047-mile walk around Wales that founders Ellen and Alex undertook to escape the frustrations of their previous work lives. Over three months of hiking along the 870-mile coastal path and Offa's Dyke border trail, they found clarity through wild camping on beaches and cliff tops, hard miles of walking, and long conversations about what might come next.
This adventure became the catalyst for their distillery. Now they grow barley for their whisky in the fields surrounding their converted pub distillery, visible from the same coastal road they once walked. As of 2023, they're producing Wales' only 100% grain-to-glass single malt whisky, with every step from malting to maturation happening on site.
The Palo Cortado Cask Aged Gin represents their philosophy: taking the road less traveled and finding unexpected beauty in the crossing of traditions. Each bottle is numbered to reflect its limited availability - there are only so many of these special sherry casks, and only so much gin that can be produced from them.
