Espadín is the most widely used agave in Oaxaca, and the clearest window into Engracia Altamirano’s hand. Her Agave angustifolia grows seven to nine years on the hillsides of Sola de Vega, cut capón and rested up to six months before harvest so the hearts swell with sugar. She wet‑roasts the piñas in an earthen pit over volcanic rock—a local tradition yielding a cleaner, less smoky spirit than most mezcals—then hand‑mashes with a wooden mallet and ferments in eighty‑year‑old sabino trunks. Just two small batches a year—clean, traditional, unhurried mezcal.

NOSE: Sweet roasted agave and crisp spearmint, lifted gracefully by delicate green herbs and white pepper.
PALATE: An oily, rounded texture unfurls roasted agave into ripe Japanese pear and wet stone, over a herbaceous underpinning.
FINISH: Long, warm, and surprisingly fresh, preserving the sweet agave alongside refined, bright botanicals.
PROFILE: A texturally rich, clean expression offering great depth without the smoke. Sip mindfully, neat at room temperature, or use as a clever base for a premium Tommy's Margarita.

Engracia Altamirano is one of the few remaining female distillers in Sola de Vega, stewarding her family’s fourth‑generation palenque. While her brother harvests the agave, she mills, ferments, and distills every batch by hand, producing just two Espadín expressions per year. She works strictly to the gusto histórico—the traditional taste profile handed down through generations. Choosing her products directly supports an independent woman distiller and helps preserve the category of destilados tradicionales.
