A 250 ml pour of Engracia's CapĂłn EspadĂn. Near Sola de Vega, Engracia grows Agave angustifolia, maturing it for seven to nine years. The agave hearts are wet-roasted over volcanic rock in an earth pit with water added per local custom, then hand-mashed in a hollowed tree trunk. After fermenting in old sabino wood, the liquid is twice-distilled in copper stillsâthe exact same spirit, now in a format made for discovery.

NOSE: Sweet roasted agave and cool spearmint, sharpened by green herbs and a clean snap of white pepper.
PALATE: Crisp Japanese pear and roasted agave lead, followed by cooling spearmint, rustic green herbs, and fresh botanicals.
FINISH: Long, warm, and bright, with sweet agave notes lingering elegantly against a botanical backdrop.
PROFILE: A vibrant, herbaceous spirit divested of smoke. An exceptional introduction to Engraciaâs craft; pour mindfully, sip neat, and take your time.

Engracia Altamirano tends her familyâs fourthâgeneration palenque in the dry hills around Sola de Vega, southern Oaxaca. Itâs quiet, remote country where wild agave matures slowly and the seasons set the pace. One of the few women distillers here, she keeps batches intentionally small so each bottle speaks of a single place and a single pair of hands.
