Maestra Engracia caps the quiote, resting the capón agaves for up to six months to concentrate their rich sugars before harvest. Wet-roasted over volcanic rock, the piñas cook slowly to minimal smoke, allowing agave's natural sweetness to lead. Hand-mashed, fermented in eighty-year-old sabino, and twice distilled in copper—this rare micro-batch honors her community's gusto histórico.
