Liso, Arroqueño, Coyote, and Tobalá are capped, harvested during May’s full moon cycle, then wet-roasted, hand-mashed, and fermented in ancient sabino trunks. Twice distilled in copper, it is a singular way to explore the historic taste of her palenque—and experience the mastery of a female distiller in her prime.
