A 25cl discovery bottle of Amairany’s inaugural release, an ensamble of endemic, hybrid Zacatoro and Papalote agaves she identified on the hillsides of El Calvario. Wet-roasted as per local tradition, hand-mashed, and double-distilled in Filipino clay pots under Maestro José Toribio, this singular harvest yields a rustic, complex character. This is her commencement: a unique way to taste her work and support a young distiller carrying ancestral traditions forward.
Tasting notes 👃
Nose: Sweet roasted agave and rustic wet hay open into toasted barley and raw honey.
Palate: Rich hazelnut, wild tree bark, and aromatic copal resin layer over a deep mineral foundation of dry clay and river rock.
Finish: Long and persistent, leaving a warm echo of crisp grain and wet stone.
Profile: An earth-forward and mineral-driven spirit with rich grain depth. Best enjoyed neat and sipped mindfully from a traditional copita or veladora glass.

About Artesanal 🏭
Dr. Amairany Carrasco Lopez came to distilling through academic study, visiting El Calvario countless times under mentor Jeiry Toribio. Immersed in the palenque, she distilled her inaugural single-batch last year for her master’s thesis under the guidance of fourth-generation Maestro José Toribio. Now holding a PhD in biomedical science, she marks her commencement with this limited release: a unique way to taste her work and support a young doctor carrying ancestral traditions forward.
